I'm always looking for tasty, healthy lunch options. I'm not one of those people who allows enough time in the morning to make lunch each and every single day. (Because of this problem.) I usually rely on leftovers from dinner (my preferred option), pulling odds and ends from the fridge to make something that resembles a salad or a quick PB&J. But these little mason jar salads would be quite a treat. I could just make a batch on Sunday and they would stay good all week! Whaddya think? Would you give these a try?
